Easy 5-Minute German Marzipan Recipe

If you've ever asked, "What is marzipan made of?" - you're not alone. This smooth, sweet mixture of almond flour, powdered sugar, bitter almond extract, and water is a beloved part of German baking and confectionery, treasured for its unique flavor and texture. In Germany, marzipan is easy to find in every grocery store - often for around 3 Euro a pack. Here in the U.S., though, I've seen it cost $10 or more, making it nearly impossible for me to use regularly in my baking. So as a passionate German baker, I quickly had to learn to make my own. And now, I'm sharing that recipe with you! Whether you need it for holiday stollen, Baumkuchen (German tree cake), or simply want to roll it into sweet treats, this easy homemade marzipan comes together in just 5 minutes - no cooking required.

What Is Marzipan Used For in German Baking?

Marzipan is used in many traditional German recipes - from candies and figurines to luxurious cakes and Christmas bakes.
Here are some common uses:

  • Covering cakes like Baumkuchen or German Sacher torte
  • Filling pastries such as croissants or Stollen
  • Shaping into candies (especially around Christmas)
  • Snacking - yes, just like that!

Why Make Marzipan at Home?

  • Save money - especially if you bake often.
  • No additives or preservatives
  • Customize the flavor (adjust sugar or add rose water)
  • It takes just 5 minutes!

Is Marzipan the Same as Almond Paste?

No! While they're made with similar ingredients, marzipan and almond paste are not the same.

Almond paste is softer, less sweet, and used more as a filling - like in almond croissants.
Marzipan, on the other hand, is smoother, sweeter, and firmer - perfect for rolling, shaping, or covering cakes.

This recipe is for true marzipan, like we use in Germany - not almond paste!

Notes

This is a no-cook marzipan recipe. While some traditional recipes require heating or cooking the mixture, I've found that this quick version works beautifully for baking, filling, and decorating. It has the perfect texture and flavor for most baked goods.
Note: Since it's uncooked, it tends to firm up a little faster than store-bought marzipan. For best results, use it within a day or two of making - or wrap it tightly and freeze for later.
